Gil's Honey is 3 generations of beekeepers -
We are located in the beautiful Finger Lakes region of NY, nestled among organic farms and state forests.
We are proud to produce raw artisan honey - unheated and unfiltered - preserving the natural pollen, enzymes, and nutrients.
We separate honey varieties by season and location, so the honey you get comes straight from the comb! The unique flavors and aromas of each type of nectar are captured in the jar.

We use natural beekeeping methods, and our bees feed on their own honey throughout the long Northeast winter.
We also make beeswax products, such as candles, soap, and skin salves, from melted honey beeswax capping.

Raw honey crystallized naturally over time and is a sign of quality. If you wish to soften or re-liquify the honey you can place the jar in a bowl of warm water until reaching the desired consistency. Temperature up to 115f will not damage the honey, and it will re-crystalize over time.
You can slow down the rate of crystallization by keeping the jar in a warm place, or NY refrigerating it.
Refrigeration is not necessary, but honey that is still liquid will crystalize slower if kept in the refrigerator.

Honey varieties

Varietal honey is separated by season and location. Different types of honey vary greatly in flavor, color, texture, and rate of crystalization.
In general, lighter honey tends to have a milder flavor than darker honey.
Varietal honey from different harvest years can vary slightly due to the natural environmental conditions that vary each year.
